After graduating from American University, Boston native Chris Tocchio decided to stay in Washington DC to kick-start his restaurant and hospitality career by working in various eateries like Ristorante i Ricchi, Isabella and Legal Seafoods in various management positions. Returning to New England, Tocchio joined 320 Advisors, a restaurant management group, taking the role as Director of Operations and was responsible for running several restaurants, including Restaurant Bricco which was awarded the “Best New Restaurant in Boston” by Bon Appetit Magazine in 1999.

Soon after, he was recruited by renowned Chef, Todd English, to open Kingfish Hall as General Manager. Tocchio then spent several years with the Olive Group and ended up leaving as The Director of Operations for Todd English’s entire company on the east coast, running up to 10 restaurants in three different cities. Tocchio then helped restaurateur Jim Cafarelli found the Rustic Kitchen and was promoted to Operations Director, opening and managing four restaurants in metro Boston and Miami.

Tired of working for others, Tocchio was ready to call something his own. In 2007, Chris teamed up with Kristian Deyesso to open their first restaurant together. He now acts as Managing Partner for Dramshop Hospitality and is responsible for the overall direction and financial well-being of the company.

Kristian Deyesso

Managing Partner

Kristian Deyesso graduated from University of Southern California with a degree in art and design. Soon after, he returned to his hometown of Boston Massachusetts where he continued his post-graduate education in graphic design from Mass College of Art. Kristian’s restaurant career started at il Panino, where he was a bartender and manager for Frank Depasquale’s upscale eatery, North End’s Bricco and the Back Bay institution, Sonsie.

After years of gaining hospitality experience he was sought out by the Italian-bistro Rustic Kitchen to help manage their growing restaurant chain. He was instrumental in managing their locations in Cambridge and Faneuil Hall and helped open their third location in Hingham, Ma.

When Deyesso teamed up with current partner Tocchio to open their first venture, Church Restaurant & Nightclub, he was finally able to utilize his education by developing the concept for Church and then designing the overall décor of the location. A year later, Deyesso further perfected his skills with the interior design and concept development of the team’s second location, The Regal Beagle in Brookline. Today, Kristian is Managing Partner of Dramshop Hospitality and oversees the operations of the restaurants, as well as ensuring that the restaurants’ designs remains cutting edge and innovative.

Laura Henry-Zoubir considers her internship at Biba to be the real beginning of her culinary career, but the Culinary Institute of America (CIA) graduate already had years of training under her belt prior to that. The New England native gained experience in New Hampshire restaurants by working her way around various positions in the kitchen. After graduating from CIA, she moved to Boston to work at Hamersley's, taking on day sous chef responsibilities. Moving on to Taranta, the North End's only Peruvian/Italian restaurant, Henry-Zoubir climbed the ranks to become Chef de Cuisine under chef-owner Jose Duarte. Taking a break from life in the city, Henry-Zoubir later took a position as the Executive Chef at the Lanam Club in Andover.

Returning to the metro-Boston area in the fall of 2009, she was instrumental in launching The Regal Beagle in Coolidge Corner and has since, taken the helm at The Beagle’s sister restaurant, Church Restaurant and Nightclub in Fenway. They have both proven to be the perfect platforms on which to showcase Henry-Zoubir's culinary creativity.
